Staying at home has meant that I have more time to cook and also more time to be inspired. Tonight’s inspiration comes from @archanaskitchen. I made a roasted and steamed peanut chaat. I was able to use already roasted peanuts to start – which I steamed for about 10 minutes. The rest of the prep was fairly straightforward (more so because I already had a green chutney on hand). In no time at all we had a tasty aperitif for our Saturday night #crisiscocktails:)
Ingredients (Serves 4-6)
1 cup Roasted Peanuts, skinless and steamed
1 Green Chilli (or to taste) , finely chopped
1 Red Onion, finely chopped
1 Tomato, finely chopped
1 tablespoon Green Chutney (Coriander & Mint)
1 tablespoon Lemon juice
1 teaspoon Chaat Masala Powder
Salt, to taste
2 Tbsp Coriander Leaves
Method
Prep all ingredients as indicated.
Toss all the ingredients for the peanut chaat in a large mixing bowl.
Adjust the seasonings to taste and serve with a cocktail of your choice.
